Cauliflower and Potato Curry
Also known as Aloo Gobi, this comforting vegetarian curry brings together tender cauliflower and potatoes in a warmly spiced onion-tomato base. Ginger is added not just for flavour but to help make the dish easier to digest. A classic, naturally gluten-free side that pairs beautifully with rice or roti.

Ingredients
- 1 medium-sized cauliflower, cut into florets
- 2 medium-sized potatoes, peeled and diced
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit (adjust to your spice preference)
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to your spice preference)
- 1/2 teaspoon garam masala
- 1/2 teaspoon ground cumin
- 1/4 cup chopped cilantro (coriander leaves), for garnish
- 2 tablespoons cooking oil
- Salt to taste
- Water, as needed
